Ingredients for Spicy Vegetable Rice:
- 2 cups of Basmati rice
- 4 cloves of finely chopped garlic
- 5 hot green chili peppers, finely chopped
- 1/4 cup of finely chopped carrots
- 1/4 cup of green beans
- 1 cup of peas
- 2 tablespoons of corn oil
- 2 tablespoons of melted ghee
- 1 teaspoon of black pepper
- 2 teaspoons of cumin seeds
- 3 cups of hot water
- Salt to taste
Preparation Steps:
- Rinse and Soak the Rice:
- In a deep bowl, thoroughly wash the rice.
- Soak it in lukewarm water for ten minutes, then drain it well.
- Sauté the Rice:
- Place a pot over medium heat and heat the ghee.
- Add the rice and stir well until the rice absorbs the ghee.
- Cook the Rice:
- Add three cups of hot water to the rice.
- Add salt to taste, cover the pot, and let the rice cook on low heat for 10 to 12 minutes or until fully cooked.
- Once done, spread the cooked rice on a flat plate and let it cool.
- Prepare the Garlic, Hot Pepper, and Spices:
- Place a pan over medium heat and add the corn oil.
- Heat the oil and add the cumin seeds. Stir until they crackle.
- Add the chopped garlic and hot green chili peppers. Stir for a minute.
- Cook the Vegetables:
- Add carrots, green beans, and peas to the pan.
- Stir and cook on low heat until the vegetables are tender.
- Serve Spicy Vegetable Rice:
- After the vegetables are cooked, add the cooled rice, black pepper, and salt.
- Mix the ingredients over the heat for a minute.
